I’m excited to share my first meal plan with you! Meal planning has been part of my life for the past several years. It has helped me save money and serve my family.
My hope is that you can benefit from me sharing my meal plan with you weekly. You can use this plan exactly how it is or change it to your liking. This meal plan accommodates our family of 5 and we usually have leftovers.
We have some great meals on the menu this week. Steak was on sale and so were baby back ribs. A couple of the recipes are my own so I included an explanation of how we make the meal.
I created a printable of this meal plan and a grocery list to make it easier for you. Click this Meal Plan – Week 1 link to get the printable list.
If you want to create your own meal plan, check out my post on how to create a meal plan.
This Week’s Meal Plan
Monday – Steak with Macaroni and Cheese
Our favorite kind of steak is Ribeye steak. The only time we eat it is if I can get it on sale. When it’s on sale, I stock up and freeze the extra for another time. This week, I got it for $4.88/lb which is a great deal in our area. I used to make potatoes to go with our steak but the family decided they wanted macaroni and cheese instead. The combination of the two is great together.
Tuesday – Tacos
We love tacos! They are one of our “go to” meals. My husband makes homemade shells and then we add ground beef, taco sauce, sour cream, lettuce, and cheese. We are not huge fans of tomatoes but if you are, I’m sure they’d be really good.
Wednesday – Steak Salad
Most of the time we make steak, we have enough leftovers for a steak salad. We fry corn tortilla’s to make tostadas, put beans on the tostada and put them on the bottom of the salad. We toss a salad with cut up steak, romaine lettuce, shredded cheese, and blue cheese dressing. Then we take the salad and put it over one or two tostada shells. It is so good!
Thursday – Chicken with Creamy Chive Sauce
This is one of our favorite slow cooker recipes. We’ve had it several times and it’s always delicious. It’s not my own recipe so you’ll want to click this chicken with creamy chive sauce link to get the recipe. We serve this over noodles.
Friday – Baby Back Ribs with Onion Potatoes
This week, baby back ribs were on sale. They are a real treat in our house. I make my baby back ribs in my slow cooker. I get two racks and cut them in half then I baste them with bbq sauce. I spray my slow cooker and put them in horizontally. I cook them for 8 hours on low. When they are done, I take them out (they will be super tender and may fall apart so be careful) and put them on a cookie sheet. I place them in the broiler to crisp them up a little bit. I serve them with yummy onion potatoes.
Saturday – Lettuce Wraps and Chicken Fried Rice
This is another one of our favorite recipes. These are not my recipes so you can get the recipes by clicking this lettuce wraps link this chicken fried rice link. I do have two modifications to these recipes. On the lettuce wraps, I use ground chicken instead of chicken breast. It makes the recipe easier. On the chicken fried rice, I omit the chicken because we already have it in our lettuce wraps.
Sunday – Chicken and Mushroom Stroganoff and Noodles
This is a newer recipe for us. I’ve made it a few times and we really like it. It’s a slow cooker recipe (I bet you can tell I love my slow cooker). Click this chicken and mushroom stroganoff link to get the recipe. I make it exactly as it’s written.
That’s my meal planning for this week. I hope this is helpful to you. I have a board on Pinterest called “Recipes We Like” (we’ve tried all the recipes on this board and have approved them) that you can follow for more recipes. I’d love to hear any tips you may have to make meal planning easier.
